Ristorante Il Sambuco

"Il Sambuco" restaurant is a new gourmet corner located inside the exclusive relais Villa Margherita in Longiano (FC). Set in an elegant and welcoming atmosphere, the restaurant deserves a detour from the main road, to discover innovative dishes respectful of raw materials and of the territory.

The menu is signed by chef Giuse Ricchebuono who, at his nineteenth Michelin Star with the "Vescovado" restaurant in Noli (SV), takes on this new challenge by bringing his cooking philosophy from Savona to the Colli Romagnoli region. Matteo Dimoro, Alberto Moretti and Mattia Podighe are the three young and talented chefs who, after having worked alongside chef Ricchebuono and in some famous Italian and international kitchens, have been chosen by chef Ricchebuono as ideal interpreters of his style and inspiration on site.

Il Sambuco restaurant

Location

The restaurant offers different levels of privacy with different atmospheres, characterized by furnishings in neutral and natural tones where the eye sweeps through openings, windows but also mirrors to capture and bring the external landscape inside. The location, which normally accommodates a total of 30 guests, is able to serve up to 100 guests for ceremonies and special events. An environment with a barrel vault entirely in brick with stained walnut furnishings houses the wine cellar with tasting room, the soul and the heart of this old inn to be rediscovered.

The Menu

The dishes of Il Sambuco restaurant range from land to sea, bringing an extreme variety of niche and local products to the table. A simplicity and genuineness that go hand in hand with extreme refinement and creativity on the plate.

There are two routes to experiment, an "à la carte" menu or a tasting menu which itakes you for a walk through the hills of Romagna. Most dishes are based on local productions, seasonal products, typical traditional seasonings, local excellences, such as the "Vacca Romagnola”, the "Mora Romagnola", the “Saba” -grape must syrup - the “Fossa” cheese and many others.

The Relais

The Relais Villa Margherita has 6 rooms and a suite, and is immersed in the green of the first hills of Romagna, close to the Adriatic Riviera, just 12 km from Cesena. Ancient rural residence, intimately linked to the peasant tradition, the Relais wants to convey the luxury of simplicity, as a perfect 4- season destination for tourist flows and for a holiday or a short stay that combines culture, nature and good cuisine, to discover hidden treasures and pure soul of this beautiful area.
